Bottom Scratchers Cipino (sp) - Cioppino
Seafood Stew

1 pint Cooking Oil
8 large Onions
20 cans Tomato Sauce
Equal part of water to Tomato Sauce
1 cup Cooking Wine
1 tsp. Rosemary Spices
2 tsp. Allspice
Salt and pepper to taste
Sea-food, Abalone, Lobster, Fish
Makes 20 generous servings
Simmer onions in cooking oil, add tomato sauce and equal part of water
. Add spices, wine, salt and pepper and let cook on low heat, one hour
or longer.
Scrub fresh live lobsters until clean. Break lobster and remove anal
gut, then chop in segments and drop into brew 30 minutes before
completion of cooking.
Abalone cleaned and pounded in the whole, cut into bite size cubes and
dropped into brew about 20 minutes prior to completion of cooking.
Drop c1eaned fish into brew 10 to 15 minutes before completion of
cooking.
